Asparagus Salad
Chilled or warm, this salad is addictive!

I knew we had a ton of asparagus in the fridge so this is what I whipped up, and friends- it’s right.on.time. This salad is simple and unassumingly delicious. The secret is to blanch the asparagus in heavily seasoned water, and then cool down on ice immediately, so they don’t get limp.
Recipe:
2 bunches asparagus
1 packet onion soup mix
2 tbl Maceo Seasoned Salt
12 oz chopped bacon
1/2 cup cherry tomatoes sliced
1/2 cup pickled beets
1/4 cup shaved pecorino cheese
1/2 tbl Maceo Steak Seasoning
1/2 tbl Ranch Seasoning
3 tbl olive oil
1.5 tbl white balsamic
Blanch asparagus in boiling water with onion soup mix and seasoned salt. Remove and cool down over ice. Strain, then cut into bite-sized pieces.
Add remaining ingredients together, and serve. This salad can also be served warm, just be sure to top with Pecorino instead of folding it in with everything else, unless you want it a bit creamy.
Either way, it’s gunna be delicious.
